If we specify meta tags to search beyond "keywords" and "description", will the additional meta tags be stored in their own fields in the database or lumped into a single meta field?

They will be put into the single Meta field in the table. You can use the crawl script to control how the meta fields are stored in the table, but you need the full Texis product to alter the fields in the table.
