Is there a way to do a custom log format for the transfer logs??

Not currently; you can only control whether Referer and/or User Agent are also logged.

Thanks.. we were hoping to catch script execution times into the logs.

You can add statistics such as user/system/real time to the logs, with LogOptions utime rtime stime. See the vhttpd manual.
