We have requirements to have logging go to our central logging server for security reasons.

How can we configure thunderstone to log remotely, perhaps to our central syslog server..?

I assume you're referring to a search appliance. That's not user configurable. Tech support could configure it as a one off though. Open a ticket using the support link above.
