Is there any way to count the number of times the seacrh
engine has been used?

You can count the number of lines in your server's access log that hit
/cgi-bin/webinator/search (or whatever your path to the webinator is).

a better way to do it is to make use of query log table.
you will find a few (identical) implementation references in mailing list
archives and maybe webinator docs.
